Being in Florida you will get an abundance of "volunteer" wildlife in and around the pond including turtles, birds, frogs and pretty much anything else which may be around. I maintain a pond in a high end gated community here in Jax where I have seen numerous racoons and foxes checking out the fish. As far as unusual plants check out corkscrew rush,http://davesgarden.com/pf/showimage/101683
its one of my favorites. In way south Fl you would be able to grow Red Mangrove outdoors. It will eventually get large but would be cool to see how it forms buttress roots. Its size can be controlled by pruning.
