I like Honey Gouramis. I almost bought a pair for a 10 gallon recently but decided to go in a different direction with Rams. If you have a breeding pair of honeys, it would be cool if you gave them their own breeding tank and see where it takes you.
bubble nests usually require absolutely no movement of the surface water in order to stay intact, otherwise they colaspe. Also, water level needs to be low enough so that the bubbles don't "jump" up onto the lid of the tank and burst or evaporate. my male grouamies used to try to build nests but gave up after a while (partially because I didn't set the tank up to meet those conditions and also because the female had zero interest in the males)
