My plants are growing out of my 10g. How do I trim them...is there anyway to save the beautiful tops of these plants?

Yep!

Pull them out of the gravel and trim the bottoms off and then re-plant the tops. You can also plant the bottoms, but they frequently will be less attractive.

Will the new plants root quickly or should I weigh the down...the plants just rooted in the substrate.
And does it matter where I cut off the top?
