You can blanch veggies by putting them in boiling water for a minute or so.
I've also cut up a zucchini or something and put the pieces in the freezer. Then when I'm ready to give the fish some veggies, just take a piece or two out, thaw and stick it in there.
For my shrimp, I would weigh the zucchini down if it wanted to float. That way the shrimp can attack it easier.
