Do I just peel the moss off the wood to remove it or is it a little more tricky once it has attached to the wood?
I don't want to rip it apart into little pieces or kill it..

I have 3 types of moss growing on it.

I want to sell my Driftwood if anyone is interested in Malaysian Driftwood.

You might have to go a bit deeper than just peeling depending on how soft the wood is and how deeply rooted the moss is. I have one piece of mopani that is so densely and deeply rooted that I doubt I'd ever be able to get it all off. But I also don't want to.

You probably won't get all of it off if it has a lot of nooks and crannies, but you can probably take off 98% of the moss.
