I've been trying to research them quite a bit and find that the given "average" size is ten inches... I've visited four specialty shops today all with adults and none were above seven inches. Most of the people I spoke with said that 6-7 inches is far more the norm than say ten.. Is this true?..

Not really hijacking?

ALong the same lines of this question of size, how quickly do these fish grow??

My green sev is 10 or 11 months old. He is presently about 6" from mouth to tail end, was almost 2" when I brought him home last June. So in 7 months he's grown 4 inches, in a 55g, understocked, with excellent water conditions and a variety of quality foods. He's very happy. I'm hoping he'll get at least 8". Wouldn't suss that out as fast growth, but a more normal pace. Healthier, anyway. (My ghost knife, bought around same time, has kept pace with sev's growth.) He has started some really nice trailers, too.:)
