Usually ppl get 3 if looking to breed and observe them for mating behavior (or aggression) and remove the "odd guy out" as it were.

Sexing angelfish prior to seeing their breeding tubes descend is near impossible even for experience breeders. They don't display distinct sexual dimorphism that other cichlids do.

it is very difficult to sex angels prior to the tubes dropping.
if you want to try and get a pair ..it is best to have a group of angels and let them pair up. usually recommended to have 6-8 angels.
get the pair then move them .
I would not suggest you keep guppies in with a bonafide pair.
