Either way you can't turn off diy CO2. You can however get an air pump to run during the night, but I doubt in a 55 gal that diy CO2 is doing anything at all much less giving your fish CO2 poisoning. Anyway just because there is more CO2 in the water it doesn't mean there is less O2. The two are independent of each other.

Interesting. I guess this doesnt always hold true? I've had my plants in my 55 for about 2.5 weeks. On Wednesday, I started a DIY Co2 using two 2 liter bottles. It has dropped the pH from 8.0 to 7.4. And since starting it, my plants have began pearling. Granted, this may be due to the plants getting acclimated to the tank. Not sure though. Also, I have yet to add any ferts to my tank. I've yet to run tests other than the pH since adding the Co2 (no fishies yet). I plan to purchase a kH kit soon to test the amount of Co2 in the tank. Might report back then.
