So upset with myself right now!!!! Please help!

You could take a water sample, and throw some sugar in. If it bubbles, the yeast are eating the sugar. THis is coming from brewing knowledge though, so I don't know if it's applicable here.
 
Alright I got a Kh test kit here are my results:

Kh: turned light yellow with 4 drops and bright yellow with 5 (in chem they told
us to stop as soon as it changes colors but the instructions say bright
yellow, which should I go with?)

pH: 6.6

Using the chart this gives me 30-38ppm which is slightly high. How do I correct this? Just increase surface aggitation?
 
Yeast will usually cloud the tank, additionally yeast seldom causes problem aside from the slime it leaves on everything. 30-38 ppm is higher than some folks reccomend but certainly not enough to cause trouble with the Kh level you have. Since you are using DIY CO2 the only good way to lower it is to increase agitation. water changes will only help temporarily, and the same situation will return in a couple of hours. I would look for something else amiss with the shrimp. My personal opinion after reading all of your info is that the CO2 is not the issue. This is solely based on my experiences, so I'll just say take it as opinion and nothing more.

Thank you. I am still not sure what happened to my shrimp so I am a little cautious about adding the female back in my main tank. I guess I will add her and keep a close eye on her to see how she is acting. Thanks for the help!
