when they sprout roots half way up, should i break them in half, and plant the bottoms to make 2 plants?
 
They just seem to do that. I think of it as normal, I don't think they neccesarily want them in the substrate.

Topping is a fairly common pruning technique -- pulling up a plant and replanting the top rather than the bottom. You could cut them in half and replant both, but I wouldn't do it on account of the roots.
 
With some of my stems, (Egeria Densia, a.k.a Anacharis) the roots act as 'runners' and head down into the substrate to root the plant down. Then, you can lift the plant up so it is about 2 inches off the substrate if you'd like to provide it more flexible movement and keep the bottoms from rotting.
