stocking my little tank

You probably just built up enough bacteria to handle a small fish load, and your current fish overloaded the tank...I'd advise a water change to reduce the nitrites, it won't slow down your cycle. It's best to feed lightly when you first start stocking the tank, & keep your eye constantly on the nitrite levels, as any amount can be dangerous to your fish...

Regarding skyrocketing water temps, you could open up the tank cover & put a fan nearby to cool off surface temp--just be sure put mesh or something that 'breathes' over tank to stop your betta from jumping out.
