suggestions for a low light low maintenance 55g

Alright its pretty much done. What i am really looking for is a couple more species that grow tall/big i want to add some stuff for the fish to swim around at all levels of the tank.

Anacharis will grow to the top of the tank correct? How is it with low light/no ferts?

does hygro grow tall? same question as above

any suggestions from this list that meet that criteria? http://www.aquariacentral.com/forums/showthread.php?t=140663

I might add a few more smaller plants any specific suggestions as to what and how to place it in the tank as it is now would be great.

Alright here my idea so far

Any better suggestion for a "lanky" plant to go on the sides of the java fern in the middle?
Id like to get a few more species in there but not sure what. I do want to keep the tank very open.
Perhaps something that grows low and spreads out but not a moss or something but a single plant that just is very wide
Any other suggestions?

Giant Hygro will reach the top of the tank and should do OK in your lighting. I'm not a fan of Anacharis. It does not like to be planted in the substrate, is better if you let it float at the top.
You could add a few small crypts if you want to fill in the midground.
 
For the jungle val(which is exactly what i am looking for) it says it needs nutrient rich soil.. is that just for fast growth? or will it die without it?

Basically i really don't want to have to dose anything and just want to have a lite amount of plants just to add a little something not really to make a plated tank with fish, but a fish tank with plants kinda thing.

Onion plant also looks really good as well however it says the same thing.

You can enrich the substrate with root tabs, its minimal and an easy way to fertilize.
