suicidal king bettas! why?!

All surface dwellers are jumpers, it's how they escape predators. They do prefer slightly acidic and soft water. You could try adding some peat to the substrate or filter. I have peat mixed in with the substrate in my tank and my betta loves it. I also add peat to the aged water containers that I use.
Yeah_ Some betas just jump.
I've have kept betas for years in heated bowls as small as a one gallon brandy snifter with an anubias plant and in tanks as large as 26 gallons. I've never noticed any correlation between the size of their home and their propensity for jumping.
I've never had one jump from the snifter, but when I had the 26 gallon I had one that had a hobby of somehow getting up over the waterfall and into the filter.
