Tank Questions

I have a 20 gal. tank that has been cycling with live rock and sand for about 4 weeks. I'm in the nitrite cycle now. I have an emerald crab and a turbo snail that I just added this weekend. I've noticed a lot of small cylindrical pellets that look like feces.. but there is nothing in the tank to create so much.... I dont think the crab goes that much...but I could be wrong. I also have some white specks floating on the surface of the water.

Can someone please help me identify these two phenomenon?
 
I've noticed the same thing from my snails, and I've actually seen that stuff falling as my snail moves his way across the rock. It seems to be either snail poop or just rolled up roughage that the snail passes over, and doesn't eat, that's my guess.
