I've been growing temple plants in my main tank for some time, but I always wonder what's going on when they reach the surface of the water. The new leaves turn a pink and green viened color all across the leaves. Does this indicate a shortage of iron or other metal?

When I replant the crown back in the substrate, the leaves go back to their bright green color.

Nothing to worry about at all AFAIK. They get more light closer to the surface, and some plants will turn red under higher light levels.
My Hygro, Rotala, Bacopa and Limnophila sessifloria all do this. Enjoy the colour in your tank :D
