You can do multiple changes a day if you want.
It is better to do the massive changes than to have high ammonia.

I would start wtih a 50% WC and then let it settle for about an hour - then test.
If your ammonia is still up, do another WC.
The only way to get rid of the ammonia is to remove it - ammonia will kill the fish while multiple water changes may just bug them a little.
 
as long as you are treating the water with water conditioner and matching temp pretty closely, you can change as much volume as necessary to keep your ammonia down.
 
I would change as much as necessary, but depending on the tank size and inhabitants, I probably wouldn't go beyond 75% in one shot If you need to change more, refill, give it a while for the old and new water to mix well, and for temperature to stabilize, then repeat. When I first put some neon tetras in my QT tank, I was doing about 400%/day until the biofilter caught up.
 
With high ammonia in the tank you can change out as much water as you want. The fish should be fine as long as temp is the same and you treat the water with a declor like "Prime".. Discus for example tolerate and actually prefer as much as a 90% water change daily so it will be fine.
