when i do a partial water change and a gravel vac,is it better to remove the fish whilst i do this or does it not matter? it concerns me that they are swimming about in all the detritis that gets thrown up from the gravel..

I never remove the fish on water changes or gravel vacs.

A thought does stike me though as I read your question...

You might want to gravel vac more frequently and/or reduce feeding if you have such a large amount floating around when doing your vacuuming.

i 100% agree. there shouldnt be to much in the gravel if your not over feeding or doing gravel vacs every so often.

I do, but my bio load and stocking require it. Some fish produce more waste than others and in some tanks I do not have clean up crews for leftover food particles due to compatibility issues.

IME, many people overfeed and create the requirement for it to be done at each water change, and to make matters worse, do not do waterchanges often enough.

What size tank do you have and what/how many fish in it?

its a low and long 10g,with 5 small plattys and 1 dwarf gourami..im currently doing a 20% water change once a week and a gravel vac every 2 weeks.

I vac the gravel everytime....you are using the vac anyways to siphon the water, so you might as well clean the gravel while you suck the water out. It won't hurt to keep it extra clean.
