The fish store I used to work at had a beautiful planted tank with rainbowfish, congo tetras, and 2 Electric Blue Jack Dempseys.
For a 55, that would be a bit much (theirs was a corner 125 or 155). If you can get ahold of the electric blues, they are amazing when they grow. You're looking at spending at least $40 each, though. I would recommend either the Congos or the Rainbows.
