Rather than fancy hinges and knobs for removal/movement, when you have the glass cut (assuming that will be the course taken), just have the glaziers cut two small squares from scrap, say one at 2"x2" and the other 1"x1". Silicone the 1x1 to the glass top, then the 2x2 on top of the 1x1. Instant knob!
