What is keeping my Nitrates so low???

Not that i am complaing but my nitrates seem to be alot lower then what they should be... The are at between 0 and 5ppm... The tank has been going for abotu 7 months now.. I have as follows

37 gallon tank
Emperor 280 and a skilter 250
15 lbs of live rock/ 40 lbs of live sand
15 Atlantic Turbo snails
1 skunk shrimp
2 percula clowns
1 Scooter Blenny (added Sat)
1 coral Beauty Angel (added Sat)

Ammonia 0ppm
nitrite 0mm
1.023

In the last 2 months i have only done 1 water change of about 8 gallons.. yet my nitrates are showing hardly any.. tried 2 different test kits.. both are the same?? Is something eating my nitrates????

Well i guess thats good.. I only feed the fish about once every 3 days ... i feed them about 3 flakes at a time and only enough till there is no extra... WHen i give them the tink shrimp i also only feed them as much as they eat..
