I love the Christmas wreaths. To make them you melt butter and marshmallows like you're making rice krispy treats and add a couple drops of green food coloring. Then instead of rice krispies, you stir in corn flakes until they're evenly coated. You'll want to butter your fingers, then arrange the mixture into little round wreaths on wax paper. To finish them off, add 3 red hot cinnamon candies for the holly berries. Let them cool thoroughly and harden. They're pretty, festive, and most importantly, delicious.
Here's a quick and easy recipe for killer PB fudge that everyone loves. I make a batch of both PB and chocolate fudge every year to take to work, and everyone looks forward to them. Everyone agrees that they're the best they've ever had.
12 oz peanut butter (Jif is best IMO)
2 sticks (unsalted) butter
1 lb powdered sugar
1 tsp vanilla extract
Melt the PB and butter together, best done in a microwave.
Stir in the vanilla and powdered sugar quickly, and keep mixing until evenly blended
Spread into a greased pan and allow to cool before cutting
If you love Reese's cups melt together a 12 oz bag of milk chocolate chips with 1/2 stick of butter (also in the microwave) and pour/spread on top of the PB fudge.
The recipe for the chocolate fudge makes twice as much, and it's really sweet and rich.
4.5 cups granulated sugar
1 stick (1/2 cup) of butter or margarine
1 Large bag of chocolate chips
1 (10 oz) bag of miniature marshmallows
1 tsp vanilla
2 cups chopped nuts (optional, I don't use nuts because some folks are allergic.)
Start with 4 1/2 cups of sugar and a large can of evaporated milk in a large, heavy saucepan (wok also works quite well IME) and boil for 8 minutes.
Remove from heat and add butter, chocolate chips, and marshmallows.
After it's all melted add vanilla (and nuts if you like) and blend.
Yum!!! I love those! My family is from German descent and they certainly kow how to make yummy treats. My father (a baker by trade) always made Christmas Stollen, a German fruit bread (not like a fruit cake at all!) and it had an almond paste running through it. I do not have the recipe, but I sure wish I did. He would make loaves and loaves of it for gift giving and our own enjoyment! :drool:
