What live plants will goldfish NOT eat?

You might want to try marimo balls. I have three in my tank and I love them. Then again, I've only had them a week. :) Everything I've read about them is wonderful - they're low maintenance, love cold water, suck up algae nutrients so that it doesn't grow in your tank, and they're quite cool to look at. And fish don't seem to eat them.

those are awesome! where did you get them and how much were they?
 
I got them at my LFS - Fish Gallery, on Greenville Ave. in Dallas, TX.

They were 3 for $25, but I could have gotten 3 for $15 if I got smaller ones. I may get 3 small ones to go with my 3 big ones at some point. They are kind of expensive as far as plants go. But they're super unique. This is what they look like in my tank:
