How do you test your water? If your parameters are off the first to go would be the shrimp. I don't think this is what is killing the fish. When you change the water are you vaccuming the gravel and rinsing the filter media? Rinsing it in old tank water? How did you treat the ich and for how long?
If it wasn't for the fry your tank wouldn't be overstocked IMO. Fry make alot of mess because they need to be fed more frequently. Maybe do an extra water change during the week while they're in the tank or give them a small tank of their own.
It sounds like your problems began with the ich outbreak. If you treated with meds it could have affected your beneficial bacteria. Tetras are also sensitive to meds and to salt. If you used the salt and heat treatment did you add the salt gradually and mix it in a container with tank water? Pouring salt directly into a tank can burn the fish. Is it possible that some of the salt that you've added could have landed on the gouramis?
Did you add the fish all at once or gradually? Do you have a heater, if so is the temp kept at a good level for all the fish you keep and is the temp. constant?
