I just convereted my 75g into a planted aquarium a few weeks ago - now the plants are really taking off and I really wish I had a 125g or something even bigger. Go BIG or go home....
 
As big as you can ! Remembering that its probably a piece of furniture too, and has to 'fit' the room...at least that's what I get told when I start suggesting an eight footer...
 
More planting options with the wider 75G. Only disadvantage is water changes are more time consuming. Do you have a python?
 
The 75 will require more use of fertilizer, lighting, fitration, heating, but the opportunities are better. Your fish will also prefer the extra swimming space.

By biggest concern was lighting the 75gal, since it is wider than the 55. For the 75gal, is there enough room for fixtures to light it completely front to back?
 
You have I think 18 inches of width, room for two sets of double bulb strip lights if you desire. Lots of options out there. How much wattage are you looking for?
 
I'd prefer the 75g. If I remember right, it's the same height and length as a 55, but with more depth.
