Ok so I finally recieved my stuff for the DIY CO2 system, I keep reading that champagne yeast is the best but I can only find 5g packets for $1.00 online and on the other hand I found 1lb of brewers yeast for $4.00. So I'm obviously leaning towards the brewers yeast. But do you think a pound is too much? Do you think it'll go bad? Do any of you have a source online to buy yeast? For some apparent reason I can't find any in my neighborhood in nyc so the internets my last resort.
 
im about 99% sure that brewers yeast isen't active, I sometimes put it on pop corn tastes really good :-)
 
Why not use instant (not rapid-rise) yeast or breadmachine yeast found in grocery stores? No fancy yeast needed. Honestly, if you start out with a lower dosage (1/4 tsp versus 1 tsp), your co2 will be consistent & last longer than the big but short burst you get with the larger amt.

I am going through the same process you are, but I am about a week ahead.
I have this thread http://www.aquariacentral.com/forums/showthread.php?t=233067 where I am showing my step by step and updates.

I set my DIY up as scaleable. I have 5 quarts of Fleischman's yeast right now, each bottle is putting out 1bps, but I haven't seen anything in the tank yet. I may have a pinch on the line into the tank. I will add the 2x2L bottle tomorrow probably.
 
I pretty much use brewer's yeast all the time now myself. I may try champaign yeast at some point but as it stands now, I'm very satisfied with it. I do keep bread yeast on hand as a backup.
