1 gal tank stocking

yep, those aren't FW, they'll live for perhaps a few weeks without any land and a few months if they can get out of the water(usually up a filter intake, heater cord etc)

Has anyone suggested dwarf crayfish (Cambarellus)? That's probably the closest thing to a freshwater crab you're likely to get.

I wouldnt keep anything besides snails in there.....

In a tank that small, really you should only keep a shrimp or 2. No way any fish, and larger inverts are a no too.

I reckon a dwarf crayfish could fit in it (it's shorter than an amano shrimp) but you could look for some fancy snails

Maybe my neighbor, but that is more of a stagnant water crab! LOL You might be able to hold a pair of White Clouds. You will need to do more frequent water changes.

Besides the fact that two 2" fish will overstock such a tiny tank, white clouds are schooling fish and need to be kept in groups of 6+. They are almost as active as danios, and should never, EVER be kept in a tank this small. I'm sick and tired of seeing white clouds in 2 gallons at the NSLFS, and would hate for this to become a trend.

No, actually, dwarf crayfish are not shorter than amanos. Dwarf crayfish are at least as long, if not longer than amanos. Their body mass is also greater, and IMHO, no one should ever keep them in less than a 10g, unless they want a species tank 5g with 2 of them.
