I agree, it is hard to be a healthy vegetarian on a good price. Most of the replacement foods are more expensive, and inconvienent to buy from some stores. It should be more readily available IMO.
Did you try doing the vegetarian lifestyle without changing your meals, just taking away the meat factor and therefore eating more? You'd still have to have nuts, beans, etc., but that's worked well for my family. They like the replacement food, but sometimes it's a pain to drive all the way out to the wholefoods store or health food store

They are all very healthy this way as well. I guess it's all about balance. Anyway, if you decide to go back the the veggie way, good luck and I hope it works out better for you!
Ps. If you go to a health store they usually have a guru on hand that will take you under their wing and point a bunch of the good food and helpful supplements.
