So are you are using a pH controller? If so, bubble rate doesn't really matter. You don't want it too fast, but you don't have to be too exact with it.

That may work. Normally people use sphagnum peat, but googling "coir peat" I saw some places saying that for gardening applications it's an alternative. I don't know how it would work in an aquarium.

I've been running co2 through eheims for years. Never had an issue. Gas builds up sometimes, and then the filter burps, and everything resets back to normal.
