Jumping beta

Male and female bettas are not supposed to be housed together. The male (when he is healthy) will usually harrass the female, sometimes to death. Also, the mating/courtship between bettas can be seriously injurious to both of them. If you graduate to the 10 g (if they both survive) I would put a divider between them.
 
In stopping at my LFS, to check out a 5g for a betta, the salesperson suggested getting 2 females instead of 1 male for it. What do you guys think?

Filter/heater and caves of course would be a part of the set up, but I was curious...
 
2 females in a 5g will fight in my expierience. You need to have atleast a 10g and three females for them to get along, and even then, some bettas just don't get along with other fish.

I think I'm gonna drop the betta pair idea, now that I've got an explanation of why I shouldn't do it.
