Again, you are skimming. She was commenting on your lack of posting, not your lack of a vote.

Yes, if not cooked properly it is dry I guess because it is lean. When in "burger" form it really shouldn't be over med-rare

You have to be careful when preparing bison as it's very lean and dries out easily. I've had some delicious buffalo burgers and it's a lot healthier than typical ground beef.

I have had moose, bison and ostrich. I really enjoyed ostrich that was quite good.

I've had moose, caribou, and seal. Don't like seal though.

Ostrich is delicious, I've had that in burger form too. I've never had the opportunity to try seal. Down here you can get alligator, it's actually pretty good.
