I'd be interested to hear from anyone who has actually seen eggs hatching - I think females might hide when this is happening.
As far as catching them, if you mean catching the newly-hatched babies, that would be VERY hard. If you mean older ones, wait till feeding time, when they will all cluster around a piece of food, and nab them then - move the net slowly. Shrimp don't seem to grasp the concept of a net, and avoid it the way fish do.
