Yes, speed (or inability to feel any pain) are the cornerstones of fish euthanasia. I've never had to use the clove/vodka method but have heard good things. The ice water method makes perfect sense. If you have the stomach for it, decapitation with a sharp pair of scissors is also quick and (of course) painless. Larger specimens are not well suited for this last method.
