If I got a small 2-3 gallon tank would it be ok to just put a 7 inch pleco in it?
 
Heck no.

Plecos are huge waste producers, no way you can keep one in a tank that small.

At that size, maybe a 20gal? Bigger as it grows.

Rule of thumb I use with plecos is to have a tank at least 4 X longer than the fish. 6" Pleco = 2ft tank, 12" pleco = 4ft tank etc.

Definitely not

As ianab has stated, plecos are huge waste producers. For a 7" pleco, I would say a 40 breeder is the bare minimum. A 55g being preferable. Those guys need the surface area more than the height. They also need plenty of filtration to handle their bio load.
 
thats too big a fish for a tank that small,, upgrade too at least a 10 if you can.

Not only to the original question by the OP but.....
