Java moss or najas grass with red cherry shrimp and red ramshorn snails. All are "fairly hardy and not too picky to feed". You wouldnt need a heater either. Small sponge filter or even an airstone would be fine.

I've always found ADFs super easy to care for. Provided clean, lukewarm water and wet-frozen bloodworms alternated with some tadpole pellets, they're happy and curious little guys!

I vote for a Cherry shrimp and/or micro crabs. I have a 6 gallon acrylic with a sponge filter and used plant cuttings from my other tanks. They are easy to maintain and fun to watch when you devote a tank soley to shrimp and crabs.
 
Gravel is fine for ADFs. You could keep two in a 5 gallon. They aren't territorial at all and don't really need swimming space. The main thing is water quality.
 
I used to have an Edge running (which I LOVED and miss). I had 8 neons, 2 julii corys, and 2 ottos. It sounds like a lot in a tiny tank but the tank was planted and I modified the filtration and lighting and the water stayed perfect, the tank had color and activity, and the ottos kept the algae down.
 
For the filter, I am using a DIY sponge filter. The heating I am not so sure about right now. I will probably go out and buy a heater that is made for mini aquariums.
