homemade apple sause

peel a five pound bag of apples ..chunk ...boil with just enough water to come below the apple line ...add cinn. when the apples start to mush...stir .....when cinn, is mixed through add a small amount of vannilla ...boil until apples are mushy but pie texture...mix with a mixer until desired consistancy ...add one and a half cups sugar and two table spoons vannila serve warm with icecream....then refriderate the rest !

Gorgonzola stuffed mushrooms

12 large white mushrooms
1/2 onion, finely chopped
1/2 cup crumbled gorgonzola cheese
1/2 cup Italian bread crumbs
1 Tbsp butter
preferred seasonings

Preheat oven to 350F. Place a baking/cooling rack on a cookie sheet. Pull the stems off the mushrooms and reserve. Place the mushroom caps stemside down on the rack and bake for 8-10 minutes.

Meanwhile, finely chop the mushroom stems. Saute chopped onion and mushroom in butter. I usually add black pepper, garlic powder and a little coriander, although you don't need to spice much because the cheese has a strong flavor. Remove from heat. Fold in cheese and bread crumbs, reserving a Tbs of the bread crumbs.

Remove mushroom caps from oven. Flip over and stuff with mushroom cheese mixture. Do not pack down. Sprinkle remaining bread crumbs on top. Broil for 2-5 minutes, checking frequently until brown.

These are way easy and rich enough that guests will only eat one or two while piling on the compliments. The perfect food! :-)
 
My grandmother's

Impossible Pie:


4 eggs
1/2cup flour
2 cups milk
3/4 stick margarine
a cup coconut
3/4 cup sugar

Oven 325 degrees

mix all ingrediants together and pour into a 10" pie tin (I usually use a cake pan) that is greased and floured (I use more butter to grease the pan gives the crust a buttery taste) and cook for 50-55 minutes.

No you don't pour it into any kind of crust it makes it's own while it is cooking.

Usually I have to make two of these cause the kids scarf the first one before I can hardly let is cool a little :eek:
 
Great Aunt Cecelia's Barbecue Sauce:

1/4 cup minced onion
1/4 cup melted butter
3 tablespoons vinegar
1 cup catsup
1 cup water
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon black pepper

Saute onion in butter add other ingredients, simmer about 20 minutes. Use on anything you want to b-bque.
Can also add shredded meat (beef, pork or chicken) and serve on buns.

I add a dash of Jack Daniels to the mix for a little fun.

my fave ....

I make mine in the oven at a low temp..just like this, Judge...but using apple cider instead of water. It does take all day, and if you let it keep cooking you get apple butter. I run through a sieve instead of using mixer. If you add a bag of red hots instead of the cinnamon..or in addition...it's a great flavor!

Tator Tot Cassarole

This is so easy.
1 lb. ground beef
1 pkg. frozen tater tots (not the huge pkg.)
1/2 c. onion
1 can cream of mushroom or cream of celery soup
shredded cheese

Brown hamburger meat in a frying pan and drain off the fat. Put the meat in a bowl. Saute' onion in the frying pan until it turns transparent. Mix meat, onion, and soup in the bowl and pour into a 9x13 glass cassarole dish. Cover mixture with frozen tater tots and sprinkle lots of cheese over the tots. I use cheddar. Bake in a 425 degree oven until cheese is melted and meat mixture is hot and bubbly.

This is not the most healthy thing on the planet but it tastes really good.
 
Kool-Aid Pie

1 pkg kool-aid any flavor (the little ones that are like 10-20 cents)
1 12 oz can evaporated milk
1 cup sugar
1 8-9 inch graham cracker crust

large mixing bowl
mixer

To start chill evaporated milk, mixing beater(s), and bowl in fridge for 5 hrs (or freezer for 2-3 hrs). Once chilled beat evaporated milk until frothy. Once frothy add sugar and mix. Once mixed add kool-aid. Mix. Once done pour into graham cracker crust and freeze for at least 5 hrs. And then dig in and Enjoy.

AS EASY AS 1-2-3 FUDGE

INGREDIENTS:
12 ounce bag of chocolate chips
1 can of frosting

DIRECTIONS:
Put the chips in a microwaveable bowl, put in microwave for 1 minute, stir and put in microwave for 30-45 seconds until melted. Add ready-made Frosting and mix thoroughly. Spread on cookie sheet and cover with plastic wrap and refrigerate for 3-4 hours. Cut in 1-inch squares and serve. Everyone will think you spent hours to prepare. Enjoy!!!
 
Chicken Tetrazzini:

1 to 1.5 pounds velveta cheeze
1 family sized can of Cream of mushroom soup
1 pound Spaghetti
1 cup chopped chicken
1 can Mushroom stems and pieces
3/4 cup chicken broth (optional)

While spaghetti is cooking combine Velveeta, Cream of mushroom soup and chicken broth over low heat. Stir frequently untill all cheese is melted and mixture is smooth. Add chicken and mushrooms, drain spaghetti and add to mix. gently stir until all ingredients are mixed well, and serve.

Makes approxamately 4 quarts.

If you don't use the chicken broth Tetrazzini is pretty gummy, I like this, but some folks prefer a smoother mix. Adjust broth to your personal preferences.
