GRINGO CHICKEN ENCHILADAS
4 chicken breasts
1 can cream of chicken soup(don't dilute)
16oz sour cream
8oz chopped green chiles
32oz grated colby jack cheese(or whatever kind you want)
10 corn tortillas(or flour)
covered baking dishes sorta deep
Cook the chicken, then chop or shred, add about a third of the cheese. In a saucepan heat the soup, sour cream and chiles. Add half of the sauce to the chicken. Cut the tortillas in half, place one layer in the bottom of your
pan(s), spread some chicken on top, then cheese. Do one more layer, then pour the rest of the sauce on top, followed by more cheese. Bake at 350 for about 25-30 mins.
