Beef & Broccoli Casserole

Ingredients:
1 lb. Marinated Steak, cut into strips or small chunks
1 can condensed soup ( prefer mushroom, but any kind will work)
2-3 medium potatoes, diced
1/4 cup cream
1/2 cup water
spices to taste
3-4 slices Velveeta, or 1/2 cup shredded cheddar
2-3 heads of broccoli, cut into small pieces

Directions:
Mix the soup, cream, water and spices. Set aside. Brown the beef lightly. Microwave the potatoes for about 5-6 minutes, until slightly soft. In a casserole dish, layer soup, potatoes, steak, and broccoli. Top with cheese. Bake in 350 degree oven for 25 minutes covered, then about 10 minutes uncovered. Should be bubbling with a light crust on top.
 
Earthquake Cake

Ingredients:
1 or 1 1/2 cup of coconut
1 or 1 1/2 cup of pecans
1 box German Chocolate Cake mix
8 oz. pkg. of cream cheese
1 stick of margarine
1 box of powdered sugar
1 tsp. of vanilla

Directions:
Preheat oven to 350. Spray baking dish with PAM. Put coconut and nuts at bottom of the pan. Mix cake as directed and pour over coconut and nuts. Mix cream cheese, margarine, vanilla and powdered sugar. Drizzle over top of cake mix (lumps ok). Bake for 50 minutes.
 
Weiner water soup

Boil weiners, remove from pot, eat soup.
Next, dice weiners, add cream corn,can of peas and chopped fries to left over soup and you have weiner water stew!!

Reivers Trifle

I make this every time when we have a pot luck at work. It's the only thing I can make :)


2 packs jello. Strawberry banana is good.
2 pack jello banana pudding. Not the stuff you heat. You just mix with milk.
2 tubs of Cool Whip. Plain is fine. The strawberry or vanilla is better.
1 angel food cake.
some chocolate sprinkly things. oh I don't know their name.
1 large bowl

Make the jello. Easy. Break the angel food cake into small bits and put it in the jello while it's setting. Be generous.

Put in fridge and set overnight.

Make the banana puding. Just spread it on top of the jello and let it set. Only takes a few minutes.

Cover with the Cool Whip. Use a lot. lol.

Lots of sprinklies on top.

That's it. Try different flavored jello and pudding. Or use custard. This is not a health food.
 
Desert!

Awsome rice crispy marshmallow thing my nan showed me ;)

8 ounces of butter
1 bag, say 600 grams of marshmallows
Half a box of rice crispys
Bag of toffees or 3 mars bars

Slowly melt the butter in a saucepan, when its all melted slowly add the toffees making sure theres not too much heat or it will burn, when they have all melted add your marshmallows, make sure its all melted and mixed together real good the n add your rice crispys, mix it really good it will be hard but jus give it some, then add to a dish quickly as it sets fast, then leave, its awsome.
 
I'll do another. A recipe from the homeland.

Deep fried Mars Bar

1 Mars bar or 1 Milky Way bar
1 cup milk
1 cup flour
1 egg
1 tablespoon vegetable oil

Chill, but do not freeze, the Mars bar by leaving it in a fridge, or freezer, for a short while. Mix the milk, flour and egg in a bowl. Whisk together to create a creamy batter. Heat the oil. Coat the Mars bar completely in batter. Lower into hot oil and fry until batter is golden brown. Serve.
 
For you BBQ fans.....

BBQ Onions and potatos:

1 large foil pie pan
3 large or 4 small potatos - peeled and cut up bite size
1 large onion - cut into wedges or bite size chunks
1 stick of butter
1 tbsp garlic salt
ground black pepper

Toss potatos and onions into pie plate, top with whole stick of butter, cut into pats (I never said it was a HEALTHY recipe!) Sprinkle with garlic salt and fresh ground black pepper. Cover tightly with foil, slap on the grill for 45 minutes. Works best on a gas grill since they take so long, but we've done them on charcoal too. Could also start them in the oven for 20 or 30 minutes if you're using charcoal...

Other variations:
-Add Mushrooms to above recipe
-Omit potatos and do onions and green peppers for braut topping
-Just do onions only! If you really like onions!

The onions and potatos will get crispy golden brown on the bottoms... Or, if you're like us, you can leave them on till you start to smell burning. We like them just this side of Chernobyl.... :D
 
This is one I made up myself and it’s so easy. The mustard makes the chicken VERY tender… plus if you’re not into “hot” the Keen’s hot mustard really does not give any heat to this at all (I wish it did!).

Mustard Chicken

3 to 4 (4.5 oz) boneless, skinless chicken breasts
1 Tbsp French’s prepared mustard
1 Tbsp Keen’s hot mustard
1/3 cup fine dry bread crumbs
1/2 tsp Lawry’s seasoned salt

Combine prepared and hot mustards. Roll chicken in mustard to coat (can marinate in mixture, as well). Combine bread crumbs and seasoned salt. Roll chicken in crumbs. Bake at 375°F to 400°F for approx 1/2 hour.
 
I must have typed this one out 3 dozen times for different cookbooks (that's what I do for a living - type cookbooks), each time thinking, “Ewwww, tomato soup???” But I finally decided to try it simply because it was always reappearing. And it’s really good, just like a spice cake.

Tomato Soup Cake

1/3 cup butter
1 cup white sugar
1 egg
1 can tomato soup
1 tsp baking soda
1 tsp baking powder
3/4 cup nuts, optional
1 tsp cinnamon
1/2 tsp cloves
1 cup raisins, optional
1 1/2 cups flour
1/4 tsp salt

Cream butter, sugar and egg. Add baking soda to soup. Add flour, spices and soup to creamed mixture, then raisins and nuts if using. Bake in 9 inch well greased square pan at 350°F for 50 to 60 minutes, depending on oven. (Check at 40 minutes.) Allow baked cake to set before cutting.

*I usually make it into muffins and, of course, bake less time.
 
This is our favourite punch:


Perfect Party Punch

2 (355 mL) cans frozen lime concentrate
48 fl.oz. (1.36 L) pineapple juice
2 L 7-Up (can use Sprite, but Sprite is sweeter and this is sweet enough as it is)
1 L lime sherbet
1 L pineapple juice, made into ice cubes

In a large punch bowl, mix lime concentrate with the large can pineapple juice. Slowly pour 7-Up in. About 5 minutes before serving, scoop sherbet into punch with a tablespoon.

The punch will be a foamy delight and a true party pleaser. Make sure 7-Up is chilled. Buy extra pineapple juice and make pineapple ice cubes for adding later to keep punch cold.
