Post Your Favorite Recipes

I get a lot of recipes off of this website:
www.allrecipes.com
The majority of them are user submitted, but there are some commercial ones too. The recipes are rated, I just look for the ones that have the top ratings and a lot of reviews. I just type either the kind of thing I'm looking for a recipe for, or ingredients that I'm looking to use.
I have gotten several awesome recipes from there. And if you sign up, they email you a recipe every day!!

New England Clam Chowder
INGREDIENTS:
1/2 cup butter
1 1/2 large onions, chopped
3/4 cup all-purpose flour
1 quart shucked clams, with liquid
6 (8 ounce) jars clam juice
1 pound boiling potatoes, peeled and chopped
3 cups half-and-half cream
salt and pepper to taste
1/2 teaspoon chopped fresh dill weed

--------------------------------------------------------------------------------

DIRECTIONS:
Melt butter in a large kettle or stock pot over medium heat. Add onions and saute until clear. Stir in flour and cook over low heat, stirring frequently, for 2 to 4 minutes. Set aside to cool.
In a separate pot, bring clams and clam juice to a boil. Reduce heat and simmer for 15 minutes.
In a small saucepan, cover peeled potatoes with water. Bring to a boil and cook until potatoes are tender, about 15 minutes. Drain and set aside.
Slowly pour hot clam stock into butter/flour mixture while stirring constantly. Continue stirring and slowly bring to a boil. Reduce heat and add cooked potatoes. Mix in half and half, salt and pepper and chopped dill. Heat through but do not boil.

This is one of my favorites off the alrecipes site.

Lazy Steak Pie

Steak pieces
Bacon, cut into strips
Carrots, chopped
Pickled onions, Washed
Red Wine
Redcurrant Jelly
Flour
Puff or Filo pastry
salt and pepper
Milk, for glazing

1. Put a little bit of oil in the bottom of the pan

2. Put the bacon in the pan

3. Put the flour on a plate and season to taste.
Toss the steak pieces in the flour then add to pan.
(This helps the steak cook and thickens the sauce)

4. Cook for 10 minutes until the steak is nicely browned

5. Add the carrots

6. Add the red wine

7. Add the picked onions.
(Make sure that they are thoroughly washed as you don't want acidy vinegar taste to the meal.)

(This balances out any of the vinegar)

9. Cook al togher for a wee while

11. Place the pastry over the mix and kinda squash down

Chilli Chicken.

You need:
2 large onions
1 cup soya sauce
1 tablespoon worcestershire
1 tablespoon garlic (chopped or paste)
16th cup of dried crushed chillis
1 cup lemon juice
1 tablespoon salt
1 tablespoon fresh ground pepper
1 teaspoon oregano (fresh or dried)
1 teaspoon basil (fresh or dried)
1 teaspoon butter , margarine, or olive oil
3 cups water
Chicken cut into pieces. I found thighs, and breasts work best

1 decent sized pot to cook up ingredients (without the chicken)
1 baking casserole, or oven safe pot.

Preheat oven to 350
Chop up onions to desired size (I go with 1 inch)
Place in pot with 1 teaspoon butter , margarine, or olive oil cook until onions are soft

Add in dried chillis and lemon juice let simmer
add soya sauce
add in worcestershire, garlic, salt, pepper, oregano, basil.
Let simmer for few minutes.

Add in 3 cups of cold water, bring to a boil. Place chicken in casserole dish. I use a glass bread maker pan.

Pour sauce over chicken, Chicken should be completely submersed. You can add 1 or 2 more cups of water to make sure that you have enough sauce to cover the chicken.

bake at 350 for 1 hour. with no cover

Serve chicken and sauce over rice and a veggie (corn usually gets the nod here)

If you like it less spicey just put less chillis.
One thing I have found is that the more expensive soyas (like kikomeyn sp? ) don't work as well as the regular old run of the mill low sodium soya sauces.

Chicken wings work well.

Hey Nursie, I'm a big fan of www.allrecipes.com too. In fact, that website is how I learned to cook. (Domestically, I'm a late-bloomer :o )

I just made this recipe last night and it turned out VERY good! Also, if a recipe has more than 10 ingredients, it's really not for me. My kitchen is just too darned small to deal with complicated recipes. (I'll be honest...I'm too lazy to deal w/ most complicated recipes too, hehe)

Crockpot Roast Beef

4lb beef roast (I used rump roast)
1 - 10.5 oz can of beef broth
1 - 10.5 oz can of Cream of Mushroom soup (I used Cream of Celery because the boyfriend can't handle mushrooms. It turned out just fine, no celery taste.)
1 packet of Lipton Onion Soup
2 tbsp flour
water
Black pepper to taste

Stir together the broth, Cream of Mushroom soup, Lipton Onion soup mix and black pepper, then pour half of the mixture into the crockpot. Place the roast in the crockpot and pour the remaining liquid over the roast. Cook on low for 8 hours.

When done, pour the liquid from the crockpot into a saucepan. In a bowl, add water to the flour until you have a creamy flour/water mixture. Pour this into the gravy and heat the gravy on medium heat, stirring frequently for about 10 minutes, or until thickened and bubbly. (I put it into a blender prior to heating on the stove for extra-smooth gravy. It turned out very good, and I'd recommend this step.)

Anyway, this was a VERY easy recipe and it turned out really good.
