Sweet and Sour Pork on Rice

this is the way my dad used to make it .. it is soooo good .. and easy . but I still have to do it with pics . just easier then trying to explain ..but will give step by step instructions with it .. here goes ..

use a cheap pork . like pork but roast or any thing like that .. cut into bite size cubes ..
chop up garlic . to your taste if you like lots then chop lots ..
chop up ginger root.. about a good tablespoon ..
Soya Sauce and Oyster sauce .. enough to coat .. let sit for about an hour .. you can use it right away but marinateing is better ..
then use Corn Starch .. or you can use Tapioca Startch flour does not work for this ... use enough to coat it so it is kinda dry .. this is were the pic comes in handy ...lol.. see pic #1

then just deep fry till done .. and set aside
now for the Sweet and Sour sauce ...

1/3 C vinegar
1/2 C Brown Sugar
4 tablespoons of tomato paste
3/4 C water
1 tablespoon of cooking oil
2 tablespoons of Cornstartch (for thickening)

mix the first 5 ingredients in a sauce pan but reserve 1/4 C of the water to add later ... heat until the tomato paste disolves and on a low boil ...
then if you like you can add bite size pieces of Onion and green peppers and pineapple .. then mix the cornstartch with the remaining 1/4 C of water and add to the mixture till thick ..
you can either mix the S&S sauce with the meat in a bowl then add to rice or put the meat on the rice then pour the S&S sauce over the meat and rice .. and enjoy

quick snack

this is an awesome quick snack...
Honey Milk Balls:
1 c. dry milk powder
1 c. quick oats
1/2 c. peanut butter
1/2 c. honey or corn syrup
roll into bit size balls, stick in the fringe(if you want to) and eat...mmmm!!
so good!
 
Ultimate cranberry relish:


1 bag fresh cranberries, washed
1 naval orange whole, peel on
1 cup sugar

toss it all in a food processor and blend it till smooth. The sweet and sour of the cranberry/orange mix is highlighed by the tang from the orange peel. Serve chilled.
Easiest cranberry relish you'll ever make, and once you try it, you'll never make anything else!
 
Dons Mean Green Zesty Salado
Ingredients:
- spinach ( raw)
- heart of palm
- goat cheese
- sliced avacado
- tomatoes
- cucumber
- beans
dressing: garlic powder
balsamic vinegar
evoo
salt and pepper
 
Bring water to boil...Once boiling, carfully open package of top ramen noodles. Place noodles into boiling water(break them if you want, I prefer to slurp up the long noodles) Boil 3-5 minutes or untill tender. Drain off water, leaving some for broth, the ammount is up to you. Empty entire contents of season package into noodles and stir well. Serve in a bowl, cup, or right out of the pot!!!

This is a real one now.

Lightly brown cubed pork pieces, seasoning to taste(don't cook it all the way)
Get a large baking dish and place pork into it, along with veggies of your choice. We use zuchinni, onions, bell peppers, and cellery on most occasions. Garlic, tomato chunks, olives, and carrots have been used when we needed something extra. Pur in cans of tomato sauce(or tomato paste and water).Bake this in a 350*F oven for 25-30 minutes. Serve over white or brown rice. When rice is unavailable, you can combine this with the recipie above. When you dont have tomato sauce, cram of whatever soup works too. This is something my mom used to make a lot when we were broke, she was working 3 jobs with 4 kids and her ailing mother all under her care. So obviously there was a lot of variety to it, and it is easy to make.

Ingredients
(1.5) cups(12oz) - Jameson Irish Whiskey
(1) 14oz can of Carnation sweet and condensed milk
(1) Pint of Coffee-mate liquid, non-dairy creamer
(1) Tablespoon Hershey's chocolate syrup
(1) Tablespoon vanilla extract
(1) Teaspoon almond extract

*Add all the ingredients to a large pitcher and stir until the mixture is well blended. Let stand and chill in the fridge for a few hours. Stir again before serving.
Serve on the rocks, straight-up, or add to coffee. :coffee2:
Makes about 8-12 servings.

Since it's the Holidays i'll post my favorite one, Russian Tea Cookies

Russian Tea Cookies: (Simple and good)

2 cups all-purpose flour
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened (or margarine) matter of preferance
1/2 cup granulated sugar
2 teaspoons vanilla
1/2 cup walnuts, very finely chopped


In a small bowl, sift the flour and salt together, In a medium bowl, mix the butter and sugar until creamy and fluffy, Add the flour mixture, vanilla and walnuts to the butter mixture and mix until well combined.

Roll dough into 1-inch balls. Place on an ungreased cookie sheet and bake for 10 minutes, until cookies are lightly brown, then allow cookies to cool for 2 minutes and then roll in powdered sugar until coated.

..now got num num :)
 
Momma's Thick Beef Stew

Ingredients:
~1 lb chopped steak
16 oz Frozen mixed vegetables
1 large chopped (cubed) potato
1 small chopped (diced) onion
1 can Cream of Mushroom Soup
1 can Tomato Sauce
Mixed/seasoning salt

Directions:
Throw the chopped steak and onion in a pot at medium heat. Stir the meat until cooked. Add all the other ingredients and turn the heat down to low/medium low. Stir occasionally until potato and vegetables are cooked. Add seasoning salt to taste.

Makes about 5-6 bowls of stew. Reheats well in a microwave (good for leftovers).
 
Goats cheese crostini, with chilli jam

1 Baquette
1 log goats cheese
1 bulb garlic
olive oil
1 tin chopped tomatos
1 onion
12 de-seeded mild red chillis
red wine vinegar - guess work sorry
brown sugar - guess work sorry

to make the jam, sweet the chillis, 6 cloves or garlic and the onion off in a good glug of olive oil. cook til it is slightly coloured. add the vinegar and sugar (i've never measured how much i use, this may work better on your second attempt) and reduce til its a syrup. add the tomatoes and cook until it turns glossy, usually 30-45 minutes. put it in a blender and leave to cool.
For the crostini slice the baquette into thinish slices on the angle, lay on a baking sheet and drizzle with olive oil, season with sea salt and bake in a cool oven. Gas mark one for 15-20 minutes until golden brown, leave to cool slightly.
once the crostini is cool rub with garlic and top with goats cheese, grill it under a hot grill until golden, add a teaspoon of the jam and your done. dead easy and looks like you spent ages doing it, cashback!

I think the recipies are made by the users and every recipe has a place for comments so that people that have tried it can put in their 2 cents. And you can sign up to recieve a magazine with recipes for free in the mail. I think they send out 4 a year. I highly recommend this site, it is even great for beginners!
