ANGEL FOOD CAKE
Serves 12
1 cup sifted cake flour

1/2 cup sugar

1 1/4 cups (10 to 12) egg whites, room temperature

1 teaspoon cream of tartar

1/2 teaspoon vanilla

1/2 teaspoon almond extract

3/4 cup sugar

Preheat oven to 350: F.

In 2 medium bowls, sift flour and = cup sugar together 3 times.

In a large mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla and almond extract. Continue beating until soft, moist, glossy peaks form.

Gradually add 3/4 cup sugar and continue beating at high speed until volume increases and stiff peaks form.

By hand, gently fold in sifted flour-sugar mixture only until all flour is moistened.

Pour into 9-inch tube pan. Cut through batter carefully with a thin spatula to break up large air pockets. Bake 40 to 45 minutes.

Remove from oven and invert pan for 1= hours or until cold. Remove cake from pan before storing.
Serving Suggestion: Fresh strawberries make a great topping for this cake.

UncaBret's A-1 Pepper Steak

2 lbs beef steak, cut into bite size strips
1/3 cup A-1 steak sauce
2 cups water
1/2 cup diced onion
1 1/2 tsp orange peel
1/2 tsp black pepper
1 large bell pepper, cut into BETBCPTO* pieces
1 16oz can diced tomatoes
1 6-pack beer (opt***)

Simmer steak, A-1 and water in a large skillet until steak is well browned.
Add onion, orange peel, black pepper and bell pepper. Simmer 10 minutes or so.**
Add tomatoes, simmer 10 minutes.
Serve over mashed potatoes.



* Big Enough That Brenda Can Pick Them Out
** Sometimes the liquid runs a little low, so I add a little more water.
*** Has nothing to do with the recipe. Unless you want to use beer instead of water. Has been known to happen.
 
JAN'S CHEESECAKE

8 oz. cream cheese (room temperature)
1 can sweetened condensed milk
1/3 cup lemon juice (bottled or fresh)

Blend well. Pour into 9" graham cracker crust. Chill. Top with can of chilled Cherry Pie Filling. Easy and delicious!!!
 
Sloppy Joes (Skillet Burgers)

1 lb lean ground beef
1 cup chopped celery
1 cup chopped onion
1 (8oz) can tomato sauce
1 (10 3/4 oz) can condensed tomato soup
Dash bottled hot red pepper sauce (Tobasco)
3/4 tsp. salt
1/4 tsp. chili powder
8-10 toasted buns

Brown ground beef. Add chopped celery and onion; cook till tender but not brown. Add can tomato sauce, one can of condensed tomato soup; dash bottled hot pepper sauce, salt, and chili powder. Simmer uncovered about 20 minutes. Spoon into split toasted buns. Makes 8-10 sandwiches
 
Mom's Pico de Gallo

3 medium tomatoes, chopped
1/2 onion, chopped
Cilantro, chopped
1 small can tomato sauce
2 radishes, chopped
2 Tbsp, cucumber, chopped
1 lime, juice only
1 Tbsp, olive oil
2 Tbsp, water
1/2 jalapeno pepper
Garlic, salt and pepper to taste

Mix together and enjoy.
 
Helpfull Kitchen Hints

A dampened paper towel or tery cloth brushed downward on a cob of corn will remove every strand of corn silk

An easy way to remove the kernels of sweet corn from the cob is to use a show horn. It is built just right for shearing of those kernals in a jiffy.

To determine whether an egg is fresh, immerse it in a pan of cool, salted water. If it sinks it is fresh. If it rises to the surface, throw it out.

Fresh eggs' shells are rough and chalky; old eggs are smooth and shiny.

For fluffier omelets, add a pinch of cornstarch before beating.

Honey Mustard Crunchy Chicken (Baked)

There are measurements, but I don't follow them.

You need:
- bread crumbs
- cornmeal
- salt
- pepper
- dijon mustard
- water
- honey
- chicken (halved)

Preheat oven to 425F.

So what you want to do is mix your dry ingredients (bread crumbs, cornmeal, salt, pepper). I put equal amounts of breadcrumbs and cornmeal, and salt and pepper to taste.

Then you want to Mix your wet ingredients (mustard, honey, water [only a tablespoon or two]). Again, I normally use equal amounts.

You can dip the chicken in the wet ingredients, but I usually just use a spoon and coat the chicken like that. Then put the chicken in the crumb mixture so its coated well. Put the chicken onto a baking sheet, and sprinkle more crumbs on top.

Grease baking pan. Place on baking sheet and bake for approximately 20 minutes.

I hope it works and tastes good!
Sometimes I add more honey or more mustard, depending on the flavor I'm going for. It's easy to experiment with this recipe.
 
Yummy and Easy Pasta Salad

Here's another recipe you can experiment with.

You need:
- Pasta (I use Penne, or Rotinni... generally something that size)
- Vinegar or Balsamic Vinegar
- Seasoning - I use Club House Italiano Seasoning

You can add:
- Chopped Olives
- Chopped Tomatoes
- Chopped Onions
- Basically anything you like :)

First you want to cook your pasta. I wont give detailed instructions on how to do that, lol. Once it is cooked, drain it, and what I like to do is run cold water on it to cool the pasta down.

Mix 1 part oil with 1 to 1.5 parts of vinegar (depending on your taste) and seasoning in a 'shakeable' container. I like to use a canning jar and just pop a lid on it. Shake well, add any extras you would like to the pasta, then add the vinegar mixture as soon as you're done shaking it, or it will separate and be a pain!

Once its mixed in with the pasta, you can either stir it to mix, or put a lid on the pasta container and shake it. Voila! Simple pasta salad!


***I do realize there are pasta salad packets out there, but with the premixed seasonings, you get more bang for your buck***
 
Oooh...I love the idea of having kitchen hints in there too!

Odors from garlic and onions can be easily removed from your hands by wiping them over anything stainless steel--faucets work well.

Garlic is easily removed from it's paper shell by crushing it with the side of a knife blade.

Add a sprinkle of cinnamon to the top of chocolate chip cookies right as they come out of the oven to give them a great flaor.

For chewy cookies, pick the pan up about 2 minutes before they are done, and 'drop' them about 2 inches. This forces out the air, preventing them from getting hard and crisp.

If a soup or broth is too salty, add a few slices of raw potato and cook in the soup for 10-15 minutes. The potato will absorb the salt, and can be discarded easily.

Grating cheddar cheese is much easier if you nuke it in the microwave for about 10 seconds. No more--you'll melt the cheese, but a quick zap gives it the right consistancy to greate smoothly.

Adding lemon or lime juice to gaucamole keeps it from browning.
