If he's taking the stuffed one's, they should be the only ones he's getting. Ghost shrimp really aren't that good for him by themselves, but they're better food association than freshwater feeder fish.
I have two methods of stuffing and I switch off between the two. The first is using a syringe to inject Vita Chem into the ghost shrimp.
Using a syringe with a low gauge will work better.

The second is stuffing pellet food, which takes a bit of time to prepare. You have to make an incision in the ghost shrimp across his carapace (I use a razer blade), remove his stomach and organs, easiest is using the syringe to "blast" them out with a stream of water, than stuffing them with small pellet food. I use Marine -S- from Hikari, I picked it up at PetSmart for $5.

It's important that your lion associates you with food. When I got mine he was a bit smaller than 1.5 inches and was absolutely terrified of me. After about a month and a half, he's grown half an inch and begs for food anytime I'm in the room now, which is very entertaining for guests.
