Regulating pH

If you're to the point where ammonia and nitrite are at 0, then just do a weekly 30% water change, sit back, and enjoy the tank. Don't worry so much about nitrates. If you are doing weekly water changes then your nitrates are fine. Mine are always at 15ppm even after a water change.
 
Yeah, sounds like your tank is cycled but test for nitrites to be sure, it should also be at 0. If nitrites are also at 0, congrats, you can now settle on weekly or bi-weekly water changes (depending on nitrate lvls). Nothing processes nitrates so that will not go down without a water change, but you don't need to worry about keeping nitrates at 0, 10ppm is well within acceptable limits. Just don't let nitrates go higher than 30ppm.
