They may punch holes here and there in leaves but not too many. The healthier your plants the less likely they're going to be touched.
Usually if you see one of the more common species of snails eating a plant- it's actually being usefull and cleaning off algae, biofilm, or removing damaged leaves. It's doing your aquarium a service.

It's a lot easier to find snails that won't hurt your plants than it is to find snails that WILL hurt your plants.
