SLRs (although most of them have a slew of automated features these days) usually offer a full manual mode, which means the photographer is responsible for setting film speed, shutter speed, aperture, and focusing the lens.
Point and shoot cameras do not offer a manual mode, you basically must trust that the factory or programmed settings will give you the results you want.
I still shoot an old (about 20 years) Fujica STX-1N fully manual SLR. I've got the standard 50mm lens, a 28mm to 70mm macro/zoom, an 80mm to 200 zoom, a 2x teleconverter and a few other odd and ends.
