I always thought that the "apostrophe s" word ending was possessive and for the plural you use just the "s", no apostrophe.

Indeed. Apostrophes are either for possessives or for contractions. The notable exception is "its" which is possessive, but does NOT get an apostrophe, because "it's" is short for "it is."
