double dosing...

PUMPKIN ROLL :woot:

line a jelly roll or cookie pan with wax paper

batter.... mix (with mixer on high) for 5 minutes (until frothy/stiff):

3 eggs
1 cup granulated sugar

add (to the batter):

2/3 cup pumpkin
3/4 cup flour
2 tsp cinnamon
1 tsp baking soda

pour and level out batter into your lined pan
bake @ 350 for ~12 minutes

while hot flip and dump onto aluminum foil lined with confectioners 10x sugar
remove wax paper
roll and let cool for 30 minutes

filling... mix until creamy:

8 oz. cream cheese
1 cup confectioners 10x sugar
1/2 tsp vanilla extract
4 tbsp butter

unroll batter (now cooled)
spread filling on unrolled batter
re-roll without foil
refrigerate overnight to set

enjoy one of the best pumpkin rolls i've ever had. this is delectable... better than any pumpkin roll i've ever seen for sale. :D

Ack, Dun! You just took away the only excuse I had for not making this... although the sponge/chiffon cake part still scares me a little. Thanks for the recipe - I love pumpkin roll!

I have to rewrite my chocolate chip pumpkin bread recipe & share that one! Or the pumpkin chocolate chip cookies... Ah I just love pumpkin. :p:

the most important part of the sponge is making sure the eggs and sugar are stiff before adding other ingredients. that's what keeps the cake spongy. ;)

and be careful rolling it..........

i expect a full report on how it is tomorrow morning (your time if you can wait). :D

3 step cheesecake (from old philly cream cheese package... like rusted old)

makes 8 servings
prep time; 8 mins + refrigerating
bake time; 40 minutes

mix with mixer on medium until well blended:
2 pkg. (8 oz ea.) softened cream cheese
1/2 cup sugar
1/2 tsp vanilla extract

mix in 2 eggs

pour into graham cracker crust

bake at 350 for 40 minutes or until center is almost set.

cool.

refrigerate for at least 3 hours.

easy... doable... creamy... what's not to like?

I make these around the holidays since they are easy and make nice small servings. I'm not one for baking so they are perfect for me. I'd rather cook the meal than the dessert!

Easy Country Apple Dumplings

Ingredients


  • 2 large Granny Smith apples, peeled and cored
  • 2 (10 ounce) cans refrigerated crescent roll dough
  • 1 cup butter
  • 1 1/2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 (12 fluid ounce) can or bottle Mountain Dew ™


Directions


  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.
  3. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew™ over the dumplings.
  4. Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

J/K, J/K, J/K... this thread is awesome... perfect timing too! just in time to get enough recipes before you need them. ;) recipes look awesome too. fishy... i think that pic just clogged my pulmonary artery... :drool:

I am not much of a cook. If it comes in a box or a can, chances are I can fix it. Otherwise... But if any of you all need a taste tester -- I"m your girl :) I think I might have gained some weight just reading these!

pumpkin roll is amazing. I've found that using dish towels instead of aluminum foil keeps them more moist :)

my mom and I make about 30 pumpkin rolls for the holidays, they are by far a family favorite
