Possible Copper Poisoning?

Do you test at the same time? In a planted aquarium in particular the pH does change throughout the day too(light cycle).

What type of water conditioner do you use? Having a small amount of ammonia in your source water shouldn't be an issue for a well planted tank and if you use a conditioner that neutralizes ammonia you should be golden.

How are the fish acting now? Get those copper results yet?
I did test the 20 and 29:
Ammonia: 0 ppm
Nitrite: 0ppm
Nitrates: 10ppm

I use Prime with water changes.

I mean when you test do test at the same time of day every time?

Prime should do the trick for the source ammonia. Still worrisome that at the time of needing a water change you see ammonia though. Have you located any dead snails or fish? How are the fish and snails acting now? Copper results?
