GRINGO CHICKEN ENCHILADAS
4 chicken breasts
1 can cream of chicken soup(don't dilute)
16oz sour cream
8oz chopped green chiles
32oz grated colby jack cheese(or whatever kind you want)
10 corn tortillas(or flour)
covered baking dishes sorta deep

Cook the chicken, then chop or shred, add about a third of the cheese. In a saucepan heat the soup, sour cream and chiles. Add half of the sauce to the chicken. Cut the tortillas in half, place one layer in the bottom of your
pan(s), spread some chicken on top, then cheese. Do one more layer, then pour the rest of the sauce on top, followed by more cheese. Bake at 350 for about 25-30 mins.

BANANA NUT BREAD
3 cups sugar
8 eggs
6 cups mashed bananas(about 12-18 bananas)
5 cups flour
8 teaspoons baking powder
2 teaspoons baking soda
2 cups chopped nuts
1 teaspoon salt

Combine salt, flour, baking soda, and powder. In another bowl combine sugar and eggs, beat till frothy. Add bananas and blend, then mix into flour mixture. Pour into a greased bread pan. Bake for one hour at 325 til brown, use a toothpick to test for doneness. Makes 4-6 loaves
 
PASTA SALAD
16 oz shell pasta
Zesty Italian dressing
2 cups fresh mushrooms, sliced
1 4 oz can sliced olives
2 cups celery, chopped
2 cups sausage meat(beef stick style, no raw stuff), chopped
1 cup peas
chives, chopped

Cook pasta and cool. Mix all ingredients except dressing, then add dressing until everything is coated and chill. You may need to add more dressing if it sits overnight.
 
Bacardi Banana Breeze.

I had this drink while I was in Jamacia. When I came home from there I decided to try making it myself and had to guess at the recipie. Tastes like a banana chocolate milkshake. Now this isn't an exact recipe but its close. Its a milkshake type of drink so you might have to toy around with the measurements.

What you need:
1 Banana
Some milk
A few scoops of Vanilia Ice Cream
1 Shot of Bacardi Rum
1 Shot Creme De Caco

Directions:
Mix all into a blender and blend to disired consistancy.
 
Ginger dressing

1/4 cup of chopped onions
1/4 cup of vegetable oil
1.5 tbsp of chopped fresh ginger root
1.5 tbsp of chopped celery
2 tbsp of water
2 tbsp of rice wine vinegar
1 tbsp of soy sauce
1 tsp of tomato paste
1.5 tsp of sugar
1 tsp of lemon juice

Combine all ingredients in a blender and blend until almost smooth. It'll still be a little chunky, but that's good. I usually use a bit more onion and ginger until it tastes right, but this is about what I start with. It's easy and tastes great!
 
And now for the alcoholics here... a mighty-strong drink.

A slow comfortable screw up against a wall the hard way with satin pillows.

Equal parts of the following liquors:
  • Sloe Gin
  • Southern Comfort
  • Vodka
  • Galliano
  • Jack Daniels
All in a highball glass, filled up with Orange Juice and topped with a generous splash of Chambourd.

Sure, it sounds like jet fuel, but it really does taste good. Careful though, it's mighty strong. In fact, I was informed (on my Baltimore Aquarium trip) that it's actually illegal to pour that drink in Maryland because they have a limit on how much liquor can go into one drink. Nice. ;)
 
One of my personal favorites that feeds a college student for a week :)...

  1. Get a pork or beef roast depending on your tastes
  2. Get a couple cans of beef broth
  3. Place the roast in a crockpot and cover completely with beef broth, use a little extra water if you have to
  4. Cook on low for 8-10 hours.
  5. When cooking is done, pre-heat oven to 350°, drain off juices and shred the roast with a pair of forks or whatever works for you.
  6. Put shredded roast in a 13x9 pan and cover in your favorite BBQ sauce (Dreamland for me :D)
  7. Bake for 30 minutes
  8. Serve on buns

If you want a little extra 'something' fry some bacon and crumble it up and toss it in there.

I really like to buy Kaiser rolls from the bakery, butter & garlic them and toss them in the oven for a few minutes after I take the shredded meat out. Try it sometime!

Paw Paw Faulkner's Chili

This is a recipe from my Great Grandfather. In light of the recent Wendy's finger in the chili thing, I thought maybe making your own would suit more of you better. This is a rather interesting recipe in that it has no tomato in it.

Makes 4 Texas-sized servings.

2# chili meat or ground beef
1/4 tsp. black pepper
4 tsp. ground garlic
2 tsp. ground cumin
1 small bottle of Gebhardt's chili powder (1.25 oz)
1 tsp. salt
2 Tbsp flour
3-4 cups water
1 tsp. oil

Heat oil in pot. Add meat and garlic. Cook slowly for 15 minutes until meat is browned. Add salt, pepper, chili powder, cumin and flour. mix well. Stir in water. Cook 35 minutes. Serve with your favorite chili toppings. I like onions and cheese.
 
Great Grandmama's Oatmeal Cookies

These things are not your everyday oatmeal cookies. these puppies melt in your mouth. This is my Great Grandmother's recipe and we have them every Christmas and sometimes during the year as a special treat.

1 cup brown sugar
1 cup Crisco Shortening
1 1/2 cup flour, sifted
2 eggs, well beaten
1 tsp. vanilla
1 cup white sugar
1 tsp. salt
3 cups of 3 minute oats (not instant!)
1 tsp. soda
1/2 cup pecans, chopped

Mix shortening, sugar, vanilla, then stir in the rest of the ingredients. Drop cookies on baking sheet or make rolls in wax paper and refridgerate to slice later. Bake on ungreased cookie sheet at 350 for 8-10 minutes. Serve and get thanked profusely for showing people that oatmeal can be good.
 
Chicekn and Rice Casserole

I am normally fundamentally opposed to casseroles, but this one floats my boat. I can't help it, I'm a bacon fiend.

Use a large glass casserole for this dish.
One pound of sliced bacon
2 cups of rice or 3 cups of the instant rice, is you use it
Salt and pepper
oregano
4 boneless, skinless chicken breasts
1 can condensed cream of chicken soup

Line bottom of casserole with bacon. Cover with rice. Mix can of soup with one can of water. Pour most over rice and bacon, stir gently to mix. Salt and pper chicken breasts, then sprinkle lightly with oregano. Place the chicken atop the soup covered rice, then spon on remaining soup and water mixture over the chicken breasts. Bake at 325 for 2 hours, covered. This is a decent one because the rice gets some great flavors from the soup and bacon.
