Question about adding fish...

OK, I'll wait a bit before getting my clean up crew.

Nitrites are at 5, Nitrates are at 30....is there any sort of rule of thumb or timetable that will tell me how long it will take to get the nitrites to 0?
 
Unfortunately, there isn't a rule of thumb about the time frames. They vary from tank to tank, depending on several factors, including the amount of LR (and the actual amount beneficial bacteria that might be on/in it), the quantity of sand you have (and again the amount of good bacteria that might be built up in it by now), size of the tank, etc etc... But, if you're registering 0 ammonia now for a few days, I don't it will take much longer.

Once both your NH3, and NO2 show up to be 0, I would dose your tank one last time as we suggested before and see if it clears in a 12-hour window. If it does, you're all set my friend!!
