What would you like to see in a lfs?

Actually, though, this thread makes me realize that I'm pretty lucky in that my LFS do have a lot of the fish mentioned so far (exodons, knife fish, flag tails, butterfly fish, polys, elephant noses, etc., etc.)

Bristlenose plecos (advertise full grown size compared to normal ones), dojo loaches, glass catfish and indian glass fish, personally I get bored on angels at fish stores but chain stores do not really carry them so maybe a couple angels. If so, get the black lace ones and the pure white angels. Dragon Gobys, a tank for the occasional oddball fish such as an electric catfish, or butterfly fish, or knifefish, or mormyridae. Also, ropefish would be cool. Kuhli loaches are pretty popular and uncommon. I'd just walk into a chain store and think of what they don't have.

You should advertise a special ordering system! Like most LFS will special order fish for you but you could have like a little list setup.

No more chintzy sales like $0.40 off of $10 for $9.60, that kind of nonsense. I would rather have prices stay high or be slashed once in a while like 1/2 off all fish or all fish food or 1/3 off all filters. Goodness know they are so marked up in the LFS they might as well come close once in a while to internet pricing.
